Hummingbird Mojitos

Katesnowbird’s Hummingbird Mojitos

Serves 2

2-3 shots silver rum
2 shots hummingbird nectar (1 part sugar to 4 parts water)
2 limes
Splash of pomegranate liquor
1/2 cup club soda
3 sprigs of fresh mint from the garden
8 fresh blueberries
Granulated sugar
Floral garnishes: Coral honeysuckle, butterfly bush, bee balm, or any hummingbird-friendly blooms you can find.
Party ice (you know, the kind that comes in a bag that you need for parties) or freezer ice. Better if crushed a bit.

Remove the leaves from the mint sprigs and place in a ceramic or glass bowl. Add the dash of zest, the juice of 1 lime wedge and 6 blueberries. Smash it all to a pulp with a muddler or a wooden spoon.

Pour rum, nectar, juice of one lime and liquor in a shaker, and whisk together.

Rim the glasses – rub a wedge of lime around the top of 2 pint glasses, then dip and turn in a plate of granulated sugar until pretty and sparkly. If using straws, do the same with those (lime rub and sugar dip).

Spoon the muddled mixture evenly into the bottom of each glass. Fill each 3/4 of the way with ice. Slowly pour the nectar mixture evenly between the two glasses. Top off with club soda. Drop remaining blueberries on top.

Garnish with lime wedges, flower blooms and petals. Sprinkle a pinch of sugar on top.

Mmmm, it’s like drinking flowers, isn’t it? Hum with delight as only hummingbirds do.
